I remember going to a tea house in China and the first thing that struck me was a two liner printed in bold near the entrance that says that even with top grade tea leaves, it requires someone who knows how to appreciate tea to know it's top grade but more important, is a person who can let go of their worries, be at peace, and only then can they smell the faint aroma of the tea leaves. How apt.

Oh yes, I love 茶淵 too! Haven't been there for ages as well, and though I'm far from a tea fanatic, but definitely love and appreciate such experiences - savouring the good tea and soaking in the ambience.

I didn't know your Chinese is so articulate as well. =)
