Attempted to cook nasi lemak. Yes, I surprised myself too. I always thought that if I could imagine cooking something, and could kinda taste it, then I would be able to produce it. It comes down to, 'Oh I think I can cook this', and I usually can churn out a somewhat decent version.
I didn't feel like touching chicken, so I left that to the helper. Might as well get her assistance to cook a few more meals in this flat before we move out and I won't have a helper anymore. She sorted out the yummy marinade and also fried them up. I also left instructions for her to fry up the ikan selar as well as the ikan bilis. Did I mention that frying chicken wings and fish is the most annoying thing in the world? ALL THAT OIL AND GREASE. Deep-frying is still done the traditional way; we don't have an air-fryer at home.
Skipped making sayur lodeh and sambal goreng, only because the meal is erm unhealthy enough. Another day. Hahahaha. Skipped the beef rendang as well. That isn’t difficult to cook, but I wasn’t in the mood for heavy meats tonight. Did an easy stir-fry of two vegetables instead- broccoli, and cabbage. After sorting out the greens and omelette, I focused my energies on the nasi lemak and making the sambal tumis that would go with it. #ImpieCooks2018
The sambal tumis is something I'm fairly used to making. I just needed to balance out the spices. I tend to like my sambal fiery. The weak sweet versions aren't for me. So making this one wasn't difficult, and people could just mix in the ikan bilis with it if they choose to.
Read a few recipes online and from the books, swirl them around in my head to figure out the science. Once I understood, I don’t need to follow them strictly anymore. The rice is everything in this meal. It's all about the quality of coconut milk and the ratio of that in the rice. I used basmati rice grains. They went well with the freshly juiced coconut milk. It has to be tasty enough so that just rice, ikan bilis, omelette and sambal would make one explode with happiness.
