I finally made good my promise to J—to rustle up a homecooked meal and deliver it to her office. I could simply pass the boxes to her and leave. But that afternoon, I was invited to sit down with her for lunch, so food portions were prepped for two. The bonus- I got to drink all the tasty cold fruit water I wanted from the dispenser. Yay!
In addition to a spicier version of butter chicken (J said she didn’t mind spicy. Hurhurhur), I also did a quick stir-fry of basmati rice with mushrooms and peppers, and baked cauliflower and potatoes and stirred them into a gravy as aloo gobi masala. Obviously I didn’t cook everything in the morning. Masala, sauces and such were cooked two days prior to be frozen. Such food prep is done weekly so I always have something decent in the freezer to thaw out and whip up in a heartbeat. #ImpieCooks2019 I don't think these foods are termed 'delicious', but it would be definitely nutritious! However, I guarantee that these foods match the standards of a decent Indian restaurant's. I benchmark certain dishes to the versions at specific restaurants. Hehehe.
When J’s office pantry is spacious and welcoming, it makes it a logistical breeze to heat up food and prep a nice-enough table. The rice and aloo gobi were cooked an hour before lunch, and remained warm in the containers. However, the butter chicken was cooked two days ago and frozen. It had to be heated up in a microwave oven; I even brought a silicone trivet for that purpose. Hahahah. While the pantry offers cutlery, it doesn't stock plates. So I brought two plates for us to eat off of. J was extremely tickled by those old-school plates. 😁
