A Pot of Sodium & A Bit of Green


Boiled up a pot of laap mei fan (臘味飯) for dinner. I really miss cooking this in a donabe over a fire stove. It would really up the game loads. There will never be wok hei in this iteration.

This was last served at the table in April when friends visited. I haven't bothered with it since. It's a sodium hit! The man had been asking for a pot for us. Finally decided to cook it. Well, I did say I'd do it every quarter. Haha. Nitrates, in moderation. This pot held pieces of chicken. I use breast meat since it'd be nicely oiled in the pot and will rarely turn out dry. #ImpieCooks2019

It's the easiest one-pot meal to whip up when time is short and there's plenty to do at home, and I need to juggle the dog's evening walk on my own. The man will take her for the mornings, and I'll join them if I don't have pressing items to do. I usually take her on the evening walks since the man can't get home in time for it.

The man likes eating his claypot rice on a plate with fork and spoon, topped with a ton of coriander. I prefer mine in a bowl with chopsticks and with spring onions. I'll simply fry up some random green vegetables to go along with the meal, just to even out the sodium levels and add in proper nutrients. Daily dinners are pretty much easy to prep foods and decent enough to ingest. Safe, boring and hopefully dependable since it's supposed to be a healthy home cooked meal. 😬
