Butter Chicken


L gave us a lovely gift of two boxes of butter chicken from Baba Masala (only on facebook and instagram currently). We know it's legit delicious because we've tasted it. Hahahaha. So it was with a lot of appreciation that we stashed the two boxes in the freezer for two good meals over the next few weeks.

These months have been all about purchasing items from home businesses. As supportive as I am about it, I'm less enthusiastic about buying items from home bakers or home cooks. The communication process irks the hell out of me. Not everyone works along my same frequency, and some of these business owners are such a pain to deal with.

That said, some home-based business owners are really superb with communication and their ordering/payment processes. This process is thankfully taken out of my hands when the darling friends buy stuff for us and sent them over. I never say no to gifts of food and savory snacks. The friends are always spot on about what we secretly indulge in. We’re absolutely spoilt. 😬

Thawed out a box for dinner on a rainy day. Butter chicken is generally mild. Baba Masala's butter chicken is a creamy version that's heavier on the tomatoes and easy on the spices. It’s a tasty iteration that’s friendly to those who can’t take fiery spices. I love this gravy. The chicken, not so much. Side dishes were needed to accompany this meal and give me some protein. The man made a pot of dry cabbage dhal to go along with the meats. Loads of green chilles in the vegetables. Wooooot. 

I decided to make fish cutlets! I shredded the snapper fillets, crumbled them with the potatoes, onions, and mint leaves, and added chilli powder for good measure. Then I rolled the little potato balls in breadcrumbs and fried them up. There! The little misshapen lumps turned out pretty okay. #ImpieCooks2020 We didn't bother adding eggs to our dinner. The boiled eggs could be eaten the next day. We had just the right amount of food left to go into the man's lunchbox. Ahhhhh, this was indeed a good meal.
