Aunty J's Appam!


Got invited for lunch and even had food to bring home for a meal the next day. Ahhh..... these mothers really love feeding us. When their food is this good, we certainly don't mind! Please do. Teeeheheheh. After lunch, Aunty J brought out appam. "Bring them home!" She said. She had intended for us to share. We wouldn't refuse. That would totally be our lunch the next day. 

The appam was an unexpected gift. This time, there was nothing in the freezer to go with the appam. Well, we had dhal, but it wouldn't quite suffice. So we toddled to the corner shop that sells pretty decent food, and bought small tubs of channa masala and cabbage pesarapappu. There has to be curry but I don't quite fancy this shop's chicken curry. We had curry powder, and frozen chicken thighs at home. Thawed out the chicken thigh overnight and boil it up for a small bowl of curry. There, chicken curry done. LUNCH SETTLED.

The appam was wrapped in foil, and kept its shape in the fridge. Heated them up by 'steaming' them in the pan. Totally worth it. These types of food wouldn't be nice heated up in a microwave oven; that won't do it justice. The appam turned out just nice soft in the center and kept its lightly crisp edges.
