I’m not fond of the salted fish in Macau. Does anyone know what sort of fish is used?
The last trip, I brought home a huge one to try. We realized that it’s the soft kind good for steaming. It doesn’t taste very good fried. It crumbles into tiny pieces which renders it quite unappetizing. I still prefer the ikan mergui sort from Penang which is good for frying.
