Since the friends were in the mood to produce a batch of pesto, they bottled to sell and also to gift to friends. They gifted us two jars of pesto. I grinned. They labeled it. This was from their Pasta J days. Ahhhhh, how very nostalgic. I truly miss that incarnation of the restaurant and its wider menu that isn't so heavy on the meats. I could eat there more often because the old Pasta J menu offered more than steaks, and it was friendlier on the stomach and the pocket.
The friends' made excellent pesto. It made any pasta taste wonderful. Heh. Now, this pesto is already cooked and done. It's great eaten with crackers or tossed into pasta when it's ready. We did both. Ate it as a pre-dinner snack with crackers that evening before we went out. Used it as pasta sauce for dinner tonight.
I can totally eat pesto pasta on its own. Maybe with shaved cheese. But I don't need meat. However, the man always need proteins. So I took out the sous vide stick to do eggs and a large fillet of chicken breast. Sliced out a small portion of the fillet for Smol Girl. She loves sous vide chicken breast. I suppose the cooking method brings out the flavors and leaves it still juicy and tender.The man's fillet was marinated in a spice rub; Smol Girl's was done with just a few grains of sea salt, bits of oregano and parsley. When the man's fillet was ready, I finished it in the pan for that additional sear. Didn't bother to sear Choya's. Hers would remain as is. Added it as a topper to her base proteins. #ImpieCooks2023
Boiled up an easy pot of penne, and transferred it to the pan to be tossed in the pesto. Used up half a jar of pesto. Garlic heavy, it was a most appetizing pasta. This made for a great easy dinner on a night when we didn't have cravings or plans to head out. Plus the monsoon surge is making it rain all week. Zzzzz. We might as well stay in and prep our own dinners. The cooking for tonight was effortless. This felt almost like 'assembling' food again. Hahaha.
